Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, sift together flour, baking soda, and salt.
  3. In a large bowl, cream cold vegan butter, brown sugar, and granulated sugar until fluffy (2–3 minutes).
  4. Add applesauce and vanilla extract; mix until well combined.
  5. Gradually incorporate dry ingredients into wet mixture; mix until just combined.
  6. Fold in vegan chocolate chunks evenly.
  7. Scoop dough onto parchment-lined baking sheet, spacing 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden.
