  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, mash bananas, then mix in maple syrup, coconut oil, almond milk, and vanilla.
  4. Combine wet and dry ingredients, stirring gently. Fold in walnuts if using.
  5. Pour into loaf pan, smooth the top, and bake for 50–60 minutes until a toothpick comes out clean. Cool before slicing.
