- 1 cup heavy cream
- 1/2 cup whole milk
- 1/4 cup granulated sugar
- 2 teaspoons unflavored gelatin
- 1/2 cup passion fruit puree
- 1 teaspoon vanilla extract
- Fresh passion fruit seeds, mint leaves, optional for garnish
- Sprinkle gelatin over a small amount of cold milk; let it bloom for 5–10 minutes.
- Warm the cream, sugar, and remaining milk in a saucepan, stirring until sugar dissolves (do not boil).
- Stir the bloomed gelatin into the warm cream mixture until completely dissolved.
- Mix in the passion fruit puree and vanilla extract.
- Pour the mixture into serving glasses and refrigerate for at least 4 hours or until set.
- Garnish with passion fruit seeds and mint before serving.
Notes
- Use coconut milk instead of dairy for a tropical vegan version.
