Ingredients

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 2 teaspoons unflavored gelatin
  • 1/2 cup passion fruit puree
  • 1 teaspoon vanilla extract
  • Fresh passion fruit seeds, mint leaves, optional for garnish

Instructions

  1. Sprinkle gelatin over a small amount of cold milk; let it bloom for 5–10 minutes.
  2. Warm the cream, sugar, and remaining milk in a saucepan, stirring until sugar dissolves (do not boil).
  3. Stir the bloomed gelatin into the warm cream mixture until completely dissolved.
  4. Mix in the passion fruit puree and vanilla extract.
  5. Pour the mixture into serving glasses and refrigerate for at least 4 hours or until set.
  6. Garnish with passion fruit seeds and mint before serving.

Notes

  • Use coconut milk instead of dairy for a tropical vegan version.
  • Substitute mango puree if passion fruit isn’t available.
