For the Meatballs:

  • 1 lb ground beef (lean)
  • 1/2 lb ground pork
  • 1/2 cup panko breadcrumbs
  • 1/4 cup green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 large egg
  • Salt and pepper to taste

For the Korean BBQ Sauce:

  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp gochujang
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1/4 cup water
  • Sesame seeds (for garnish, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine beef, pork, breadcrumbs, green onions, garlic, ginger, soy sauce, egg, salt, and pepper. Mix gently.
  3. Shape mixture into 1-inch meatballs. Place on the baking sheet.
  4. Bake for 20 minutes or until golden brown and cooked through.
  5. In a saucepan, combine sauce ingredients. Simmer 5–7 minutes until thickened.
  6. Toss baked meatballs in the sauce until well-coated.
  7. Garnish with sesame seeds and green onions. Serve hot.
