For the Beef Tips:

  • 1 ½ to 2 lbs beef stew meat or sirloin tips

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 ½ cups beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon soy sauce (optional)

  • 1 teaspoon dried thyme or Italian seasoning

For the Gravy:

  • 2 tablespoons all-purpose flour

  • ½ cup water

  • ½ cup sour cream or cream of mushroom soup

For Serving:

  • 8 oz egg noodles, cooked and drained

  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a skillet. Brown beef on all sides.

  2. Add onions and garlic; cook for 2–3 minutes.

  3. Pour in broth, Worcestershire, soy sauce, and seasonings. Simmer for 1 to 1½ hours.

  4. Whisk flour and water; stir into pan. Simmer until thickened.

  5. Stir in sour cream (optional).

  6. Cook noodles according to package directions.

  7. Serve beef tips over noodles. Garnish and enjoy.
