For the Beef Tips:
1 ½ to 2 lbs beef stew meat or sirloin tips
2 tablespoons olive oil
Salt and pepper, to taste
1 small onion, diced
2 garlic cloves, minced
1 ½ cups beef broth
1 tablespoon Worcestershire sauce

1 teaspoon dried thyme or Italian seasoning
For the Gravy:
2 tablespoons all-purpose flour
½ cup water
½ cup sour cream or cream of mushroom soup

Heat olive oil in a skillet. Brown beef on all sides.
Add onions and garlic; cook for 2–3 minutes.
Pour in broth, Worcestershire, soy sauce, and seasonings. Simmer for 1 to 1½ hours.
Whisk flour and water; stir into pan. Simmer until thickened.
Stir in sour cream (optional).
Cook noodles according to package directions.
Serve beef tips over noodles. Garnish and enjoy.
