For the Meat & Marinade:
- 2.5–3 lbs beef chuck roast
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 2 dried pasilla chiles
- 5 garlic cloves
- 1 white onion
- 2 tbsp apple cider vinegar
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 bay leaves
- 3 cups beef broth
- Optional: pinch of cinnamon or cloves
For the Tacos
- Corn tortillas
- 1½ cups shredded Oaxaca or mozzarella cheese
- Chopped onion and cilantro
- Lime wedges
Instructions
- Toast dried chiles in a skillet until fragrant; soak in hot water for 15 mins
- Blend soaked chiles with garlic, onion, vinegar, spices, and 1 cup broth until smooth
- Marinate beef in the blended sauce for 4+ hours or overnight
- Add beef and remaining broth to a pot with bay leaves; simmer 3 hours until tender
- Shred the beef and return to the broth
- Dip tortillas in broth, fill with beef and cheese, and pan-fry until crispy
- Serve with consomé, onion, cilantro, and lime
Notes
- Swap beef for chicken, lamb, or jackfruit
- Use mozzarella or Monterey Jack if Oaxaca cheese isn’t available
- Store leftovers separately and reheat for maximum crispiness
