For the Shortbread Base:

  • 1 cup unsalted butter (cold, cubed)

  • ½ cup granulated sugar

  • 2 cups all-purpose flour

  • ¼ teaspoon salt

For the Caramel Layer:

  • 1 can (14 oz) sweetened condensed milk

  • ½ cup unsalted butter

  • ½ cup light brown sugar

  • 2 tablespoons light corn syrup

  • ¼ teaspoon sea salt (optional)

For the Chocolate Topping:

  • 1 ½ cups semi-sweet chocolate chips

  • 1 tablespoon coconut oil or butter


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper.

  2. Mix butter and sugar until creamy. Add flour and salt, blend until crumbly. Press into the pan and bake for 20–25 minutes.

  3. In a saucepan, melt butter, sugar, condensed milk, and corn syrup. Stir constantly until caramel thickens and darkens.

  4. Pour caramel over baked shortbread. Let cool.

  5. Melt chocolate chips with coconut oil. Spread over caramel. Let set before slicing.
