- 1 lb (450g) large prawns, peeled and deveined, tails on
- 2 tablespoons cornstarch
- 1 tablespoon all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon white pepper
- ½ teaspoon crushed Sichuan peppercorns (optional)
- 2 tablespoons vegetable oil
- 3 cloves garlic, finely chopped
- 1–2 fresh red chilies, thinly sliced
- 1 green onion, finely chopped
- ½ teaspoon sugar
- Lemon wedges, for serving
Instructions
- Pat prawns dry thoroughly.
- Mix cornstarch, flour, baking powder, salt, and white pepper; coat prawns lightly.
- Heat oil and fry prawns in batches until golden and crisp.
- Remove excess oil, stir-fry garlic, chilies, and green onion.
- Toss prawns back in, season with a sprinkle of sugar, salt, and pepper.
- Serve immediately with lemon wedges.
