- 1 tablespoon olive oil
- 1 large onion, diced

- 1 can black beans, rinsed and drained
- 1 can fire-roasted diced tomatoes (14 oz)
- 1 cup canned or fresh diced tomatoes
- 4 cups chicken broth
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lime
- Optional toppings: shredded cheese, sour cream, fresh cilantro, crushed tortilla chips
Instructions
- Dice onion, garlic, and bell pepper.
- Add chicken, chopped vegetables, beans, corn, tomatoes, and broth to the crockpot.
- Stir in cumin, chili powder, paprika, salt, and pepper.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Shred chicken and return it to the crockpot.
- Stir in lime juice and serve with toppings of choice.
