  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional toppings: shredded cheese, sour cream, fresh cilantro, crushed tortilla chips

Instructions

  1. Dice onion, garlic, and bell pepper.
  2. Add chicken, chopped vegetables, beans, corn, tomatoes, and broth to the crockpot.
  3. Stir in cumin, chili powder, paprika, salt, and pepper.
  4. Cook on low for 6–7 hours or high for 3–4 hours.
  5. Shred chicken and return it to the crockpot.
  6. Stir in lime juice and serve with toppings of choice.
