Oat Base and Topping:

  • 1 cup unsalted butter (cold, cubed)
  • 1 cup packed brown sugar
  • 2 cups rolled oats
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Caramel Layer:

  • 1 bag (11 oz) caramel candies
  • ⅓ cup heavy cream
  • Pinch of sea salt (optional)

Chocolate Layer:

  • 1½ cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13″ baking pan with parchment.
  2. Combine flour, oats, brown sugar, baking soda, and salt. Add butter and vanilla; mix until crumbly.
  3. Press ⅔ of the mixture into the pan and bake for 10–12 minutes.
  4. In a saucepan, melt caramels with cream. Pour over crust.
  5. Sprinkle chocolate chips and let melt. Spread evenly.
  6. Crumble remaining oat mix on top and bake 15–18 minutes.
  7. Cool completely before slicing.
