Description

A hearty one-pot meal featuring tender chicken, creamy rice, and savory mushrooms. Perfect for busy weeknights!


Ingredients

  • Protein & Base: 2 chicken breasts (or 4 thighs), 1 cup white rice
  • Veggies & Aromatics: 1 cup mushrooms (sliced), ½ onion (chopped), 2 garlic cloves (minced)
  • Liquids & Seasonings: 2 cups chicken broth, ½ cup heavy cream, salt, pepper, paprika, thyme
  • Extras: 2 tbsp olive oil, 2 tbsp butter, ¼ cup Parmesan (optional), fresh parsley (garnish)

Instructions

1️⃣ Sauté chicken in oil, season, then remove.
2️⃣ Sauté onions, garlic, and mushrooms.
3️⃣ Toast rice, then add broth and cream.
4️⃣ Return chicken, cover, and simmer for 20-25 mins.
5️⃣ Rest for 5 mins, stir in Parmesan, and garnish.
